Lamb of Tasmania comes from lambs raised on open pasture on the island of Tasmania, off the south coast of Australia. They graze on grass in a cool, wet climate, which gives the meat a lean, tender bite and a clean, mild flavor without the strong gamey taste some people expect from lamb.

Each rack comes frenched and ready to cook, making it an easy centerpiece for a holiday table or a dinner party.

  • Grass fed on Tasmanian pasture
  • Mild, clean flavor with a tender bite
  • Frenched rack, about 2 to 2.5 lb
  • Serves 3 to 4

To cook: season with salt, pepper, garlic and rosemary. Sear the fat side until golden, then roast at 400°F until the center reads 125 to 130°F for medium rare. Rest 10 minutes and slice between the bones.
