About Icon Crossbred Wagyu

Eastern Australia · F1 Wagyu x Angus

Icon is the foundation program from Paradigm Foods in Brisbane. Each animal is an F1 cross: Wagyu sires, mostly high Tajima bloodlines, over Angus mothers. That pairing puts real Wagyu marbling into a big, beefy Angus steak. Icon cattle are grain fed for 365 days with no added hormones and no antibiotics.

How to cook

Best for: Ribeye, NY strip, filet, sirloin, Denver, flank, skirt, tri-tip

  1. Rest at room temperature 30 minutes and pat dry.
  2. Season with salt and pepper.
  3. Sear in a very hot cast iron pan or over high heat on the grill, 2 to 4 minutes per side.
  4. Pull at 125 to 130 F for medium-rare and rest 5 minutes. Wagyu fat renders faster, so check early.
Storage and thawing

When it arrives: move everything to the freezer right away, still sealed.

Freezer life: vacuum sealed cuts keep their best quality for up to 12 months at 0°F.

Thawing: thaw in the fridge, still sealed, for 24 to 48 hours. Big cuts like a tomahawk or picanha loin need up to 72 hours. Never thaw on the counter or in the microwave.

Quick thaw: submerge the sealed package in cold water, changing the water every 30 minutes. Steaks thaw in 1 to 2 hours.

After thawing: cook within 3 to 4 days. Do not refreeze.
